i eat it once a week just to make sure i don't eat too much beef... i also eat pork once a week-- the rest of the week it's beef unless i see some good seafood which is usually every other week...
i like to make a whole bird about 3-4 pounds and i recently found McCormick Grill Mates montreal Chicken seasoning which is really awesome, and then i just rotisserie it, there's nothing as good as rotisserie IMO... i like to rotisserie lego'lamb and pork loins too...
jasmine rice and peas on the side.... simple, but good food...

We have about 6 breasts baked right now--this week they were cheaper than leg quarters. They will become: sandwiches, sliced straight off; chicken salad (sandwiches, wraps, or with crackers); enchiladas or green-chile chili; or soup.
I eat mostly chicken but it's gotta be local and free range. Won't buy it if it came from a cage warehouse.

Beef on special occasion or when burgers abound. Fish when I can though the wife doesn't like it so that is rare. Buffalo and venison every chance I get. Oddly enough more buffalo than venison.

but i have good cholesterol, my doc says i need to lower my "good" cholesteral, but he only prescribes these fish oil capsules that cost like 200$ (Lovaza).
everybody is differnt but my "secret" to keeping my weight good is not to eat "extra" bread and less than 1 soda pr week...... i eat a sandwich and on occasion buttered (never oleo) biscits in the morning, but never eat bread with my meals which is like a sin to all of my southern kin...they have buttered bisuits or rolls or bread as a side dish at every meal...
i carry 185 to 190 on 6'2 and eat fatty meat, real butter, sour cream on my baked taters, lots of virgin olive oil, sesame oil as seasoning esp on grilled meat.....
i also eat alot of unsalted almonds, walnuts and pecans for energy...

here's one that's really popular at our house:
take a pork loin, cut it into 1 inch cubes sprinkle generously with oregano, add a couple garlic cloves crushed up, pour red wine (i use cabernet) over until it's soaking well.
take a dozen of those bamboo skewers and put them into water.
wait 2-4 hours, pour off the wine sprinkle with black pepper, skewer them all up end to end or the bamboo will burn even tho it's been soaking.
add a little sesame oil to virigin olive oil and pour it over the skewered meat...place on very hot grill until done.....
serve with steamed whole artichokes and get your fingers into the meal..
it's hard to stop eating those...
